How is Extra Virgin Olive Oil produced?
It is all about the treatment of the olive. If it is harvested at the right time and quickly first cold pressed, the oil will be fresh and unspoilt – extra virgin. Our olive press is on the farm (unlike most) which ensures our olives remain unscathed.
If the olive is not treated properly the olive oil has to be refined (like most vegetable and peanut oils). If the olive oil is labelled ‘pure’, ‘ordinary’, ‘light’ or ‘pomace’, these lack all the health benefits of extra virgin olive oil.
